Meet David Meraz
Executive Chef David Meraz oversees the culinary program for Vi at Highlands Ranch, including menu creation and food preparation. He has more than 20 years of culinary experience working with multiple styles of restaurant from fast food, fast casual, and fine dining. Chef Meraz joined Vi in 2020 and began his role as Executive Chef at Vi at Highlands Ranch in 2024.

Mount Rosa Restaurant
Open for: Breakfast, lunch, dinner (Monday–Saturday) and Sunday brunch
The Mount Rosa Restaurant is Vi at Highlands Ranch’s dining destination for breakfast, lunch and dinner, with each meal featuring seasonal and locally sourced ingredients whenever possible. We offer scratch-made desserts prepared by our in-house pastry chef, often served with homemade ice cream.
The restaurant also offers a sumptuous Sunday brunch to wind down the weekend in delicious fashion.
Dad Clark Bar
Open for: Evening wine, beer and cocktails, light bites (every day)
Belly up to the Dad Clark Bar for a before-dinner beverage or pre-theater bites with friends!
The bar is also a great place to enjoy the Mount Rosa Restaurant’s full menu in a casual, cozy setting.
